Previously he worked with Arizona's Big Four Restaurants as chef at the Steamers Oyster Grill in Phoenix and American Grill in Mesa. At the latter, the menu was rotated every three months to focus on regional specialties throughout the U.S. He has also collaborated as guest chef with other Millennium Hotels including Boston and Los Angeles. Annually he tours the Napa Valley to learn more about California wines to augment his restaurants' wine lists and create innovative wine dinners and pairings.

"Having toured farms, ranches, and seaports throughout the country, I am excited about experimenting with the freshness of regional seafood and the bounty of quality produce that New England has to offer. I particularly enjoy preparing seafood dishes and New England has a wide variety of superb fresh fish and shellfish," said Poe.
